The wine
Jean-Marc Pillot’s Les Marcherelles (1.5 hectares) is fermented with indigenous yeasts in a mix of old oak barrels (15–20% new), followed by 12–15 months aging on lees, in oak barrels. The wine undergoes minimal intervention with low yields and gentle pressing, preserving its vibrant acidity and mineral complexity, while showcasing citrus and floral notes.
