The producer of Cervaro della Sala is the Antinori family, one of Italy's oldest and most prestigious winemaking families, with a history dating back over 600 years. The Antinori family has been involved in the art of winemaking since 1385, with their commitment to quality and innovation being passed down through 26 generations. Castello della Sala, the estate where Cervaro della Sala is produced, was acquired by the Antinori family in 1940. Located in the Umbria region, the estate spans over 500 hectares and is renowned for its picturesque vineyards and historic castle. The Antinori family has played a pivotal role in revolutionizing Italian winemaking, blending tradition with modern techniques to create exceptional wines. Cervaro della Sala is a testament to their dedication to excellence, combining the elegance of Chardonnay and Grechetto grapes with advanced winemaking practices.
The wine
Located close to the Tuscan border in Umbria, the medieval castle of Castello della Sala and 170ha of vineyards was purchased by leading Italian winemaking family Marchesi Antinori in 1940. From here, they have produced the iconic white wine ‘Cervaro della Sala’ since its first vintage in 1985. Cervaro della Sala is always a blend of mainly Chardonnay with a soupcon of indigenous variety Grechetto and completes fermentation, followed by several months of ageing in French oak barriques, before it is ready to be released.
Cervaro’s ripeand generous style of Chardonnay goes well with rich buttery dishes, namely white fish, and chicken, but also meaty shellfish like lobster and scallops. Creamy soups, like potato and cauliflower, and creamy risottos or pasta dishes also tend to be great accompaniments, as are mild and creamy cheeses, like goats’ cheese, young brie, and a young Langres.
