Ulysse Collin

Based in Congy, in the Coteaux du Sezanne, southwest of the Cote du Blancs, grower-producer, Olivier Collin, took back the 8.7 hectares of family vineyards in 2003. They had been rented out to local negociants for decades. In 2004 he made his first vintage. Collin studied law before deciding to turn to the family business of making wine and did an internship with cult Champagne maker Anselme Selosse before starting out on his own.

Only single vineyard wines are made, and all are fermented in oak barrels to give that added textural richness and breadth of palate. Only partial malolactic fermentation is carried out on all wines which softens the region’s hallmark acidity and gives a rounded finish. Low dosage levels are used throughout, a touch with Collin learned during his internship with Selosse.
