Barone Ricasoli Castello di Brolio

The Castello di Brolio Vin Santo del Chianti Classico is made mainly from the grape variety Malvasia, sometimes supplemented with Canaiolo and Sangiovese, and comes from the estate’s 7.40 ha Malvasia vineyard in Pianarsiccio.

Bunches are picked individually in early October and then hung to dry for three months in special well-ventilated drying rooms. The slow fermentation takes around two years and is followed by between 3-5 years of ageing, all in small oak caratelli of 225 litres.
