Avignonesi
The Occhio di Pernice Vin Santo from Avignonesi is made entirely from the black Sangiovese grape, which gives the pink colour to the style. Grapes are hand-picked from best vineyard parcels and then laid out on straw mats, in a special drying room, for several months. The slow natural fermentation takes place in 50 litre caratelli casks, and is followed by around ten years ageing. During the very long ageing process, around half of the liquid evaporates.
