From here, they have produced the iconic white wine ‘Cervaro della Sala’ since its first vintage in 1985. Cervaro della Sala is always a blend of mainly Chardonnay with a soupcon of indigenous variety Grechetto and completes fermentation, followed by several months of ageing in French oak barriques, before it is ready to be released.\u003c\/p\u003e\n\u003cp\u003eCervaro’s ripeand generous style of Chardonnay goes well with rich buttery dishes, namely white fish, and chicken, but also meaty shellfish like lobster and scallops.
